Taste of Thailand
I was very fortunate to be able to take some time off this past holiday. Me and the boys decided to it was time to experience Thailand. Although, I wish we had longer, we packed as much as we could into our 2 week adventure. From the street markets of Bangkok to the beautiful beaches of Phuket, the unique scenery and culture was magnificent.
Before we went everyone said the food in Thailand was fantastic. We were recommended places to eat and dishes to try. For a family with a pretty classic Mediterranean diet we hoped we could handle 2 weeks of Thai cuisine. Our friends were right, the food was outstanding. We enjoyed it so much we spent an afternoon at a Thai cooking school perfecting the art of Pad Thai.
We brought home a couple good recipes to add to our home menu. I know when all my boys are home we will enjoy this Pad Thai dish again. I thought I would share the recipe we got from The Siam Rice Thai Cooking School in Chiang Mai.
Fried Noodles Thai Style (Pad Thai)
Ingredients:
100g Rice Noodles
50g Sliced Chicken Breast
2 Tbsp Cooking Oil
50g Chives, bean sprouts and long beans
1 Egg
1 Tbsp Fresh garlic
30g Firm tofu
5 Tbsp Water
1-2 Tbsp Oyster sauce
2 Tsp White sugar
1 Tbsp Soya sauce
1 Tsp Dried shrimp (optional)
1 Tbsp Ground peanuts
1 Wedge Fresh Lime
To taste Dried Chilies
Method:
Add oil to hot wok, smash the garlic, add it to the wok with tofu and chicken, cook on high heat until the chicken is fully cooked
Add egg and stir until until the egg has fully cooked
Add water, oyster sauce, sugar and soya sauce
Add in the noodles and keep stirring until the noodles become soft. Then add chives, bean sprouts and long beans, continue to stir and cook for an additional minute
Plate Pad Thai and garnish to taste with ground peanuts, chilies fresh lime and sugar (all optional)
